Harvest the plant when they are 6-8 inches tall.
How to preserve Bok Choy
To store bok choy for the long term, follow these steps:
Rinse the bok choy thoroughly in cold water and remove any damaged leaves or stems.
Blanch the bok choy by immersing it in boiling water for 2-3 minutes.
Immediately transfer the blanched bok choy to an ice bath to stop the cooking process.
Drain the bok choy and pat it dry with a clean towel or paper towel.
Place the bok choy in airtight containers or freezer bags and store it in the freezer for up to 8 months. Alternatively, you can store it in the refrigerator for up to a week by placing it in a resealable plastic bag with a damp paper towel to keep it fresh.
