Chickpea Salad Lettuce Wraps

Chickpea Salad Lettuce Wraps are the perfect go-to when you need a quick, healthy lunch. They’re easy to throw together, packed with protein, healthy fats, and good carbs, giving you a light but balanced meal. Whether you're in a hurry or just want something fresh and satisfying, these wraps hit the spot every time. Plus, they're loaded with nutrients to keep you feeling energized and full!

Ingredients:

- 1 can (15 oz) chickpeas, drained and rinsed

- 1 cucumber, chopped

- 1-2 tablespoons plant-based ranch dressing (or preferred dressing)

- 6-8 large green leaf lettuce leaves, washed and patted dry

- 1/2 cup cherry tomatoes, halved

- 1/2 avocado, diced

- Everything But the Bagel seasoning (to taste)


Instructions:

- In a medium bowl, mash chickpeas with a fork add chopped cucumber, and ranch dressing.

- Spoon the chickpea mixture onto the center of each lettuce leaf.

- Add cherry tomato halves and diced avocado on top of the chickpea mixture.

- Sprinkle Everything But the Bagel seasoning to taste.

- Fold the lettuce around the filling and enjoy!
