Ingredients:


For the Salad:

- 4 cups fresh corn kernels (about 4-5 ears of corn)

- 1 cup diced red bell pepper

- 1 cup diced green bell pepper

- 1/2 cup diced red onion

- 1 cup diced cucumber

- 1/2 cup chopped fresh cilantro

- 1 jalapeño pepper, finely minced (remove seeds for less heat)

- 1 can (15 oz) black beans, drained and rinsed

- 1 cup cherry tomatoes, halved

- Juice of 2 limes

- Zest of 1 lime

- Salt and pepper to taste


For the Dressing:

- 1/4 cup olive oil

- 2 tablespoons fresh lime juice

- 2 cloves garlic, minced

- 1 teaspoon ground cumin

- 1 teaspoon chili powder

- Salt and pepper to taste



Instructions:


1. Prepare the Corn: Start by shucking the corn and removing the kernels from the cob. You can do this by standing the corn cob on one end and using a sharp knife to slice down the sides to remove the kernels. Place the fresh corn kernels in a large mixing bowl.


2. Prepare the Vegetables: Dice the red and green bell peppers, red onion, cucumber, and jalapeño pepper. Add them to the bowl with the corn.


3. Add the Black Beans and Tomatoes: Drain and rinse the black beans, then add them to the mixing bowl. Halve the cherry tomatoes and also add them to the bowl.


4. Prepare the Dressing: In a separate small bowl, whisk together the olive oil, fresh lime juice, minced garlic, ground cumin, and chili powder. Season with salt and pepper to taste.


5. Combine and Toss: Pour the dressing over the salad ingredients in the large mixing bowl. Toss everything together gently to ensure the dressing coats all the vegetables and beans.


6. Add Fresh Herbs: Chop the fresh cilantro and add it to the salad. This will add a burst of fresh flavor. Also, zest one lime over the top of the salad for an extra citrusy kick.


7. Chill and Serve:*Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together. Before serving, taste and adjust the seasoning with additional salt, pepper, or lime juice if needed.
