Ravishing Radishes

Radishes are a quick grown little vegetable that is nutritious and low-calorie and is a great addition to a healthy diet. They are rich in vitamin C, fiber, and potassium. Additionally, they are easy to grow and can be a fun addition to a home garden. Radishes can be eaten raw in salads, pickled, or roasted for a unique flavor.

Growing

To grow radishes, you will need to choose a sunny spot in your garden with well-draining soil. Sow the seeds about half an inch deep and one inch apart, then water them well. Radishes prefer cool temperatures perfect for spring and fall planting and should be kept moist but not waterlogged. Within a few weeks, the radishes should be ready to harvest!

Harvesting

To harvest radishes, gently pull them out of the soil by grasping the base of the stem just above the root. They are usually ready to harvest about 28 days from planting. Be sure to harvest them before they become too large and woody.

Pickled Radishes

Ingredients:

1 lb radishes

1 small onion

1/2 c Vinegar

1/2 c Water

1 1/2 tsp salt

1 tbs sugar

Desired spices




Instructions:

  1. Wash and slice the radishes thinly.

  2. In a bowl, mix together vinegar, sugar, salt, and any desired spices.

  3. Add the sliced radishes to the mixture and stir well.

  4. Let the radishes marinate for at least an hour, or refrigerate overnight for more flavor.

  5. Transfer the pickled radishes to an airtight container and store in the refrigerator for up to a month.

Enjoy as a tasty and tangy condiment!



Roasted Ranch Radishes

Ingredients:

  • 1/2 lb of radishes, chopped

  • 1 tablespoon of olive oil

  • 1 tablespoon of ranch seasoning mix (see my homemade spices)

  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 425°F (218°C).

  2. In a bowl, toss the radishes with olive oil until coated.

  3. Sprinkle the ranch seasoning mix over the radishes and toss again until coated.

  4. Spread the radishes out in a single layer on a baking sheet.

  5. Season with salt and pepper to taste.

  6. Roast for 15-20 minutes, until the radishes are tender and lightly browned.

  7. Serve and enjoy!

I hope that you give radishes a try in your garden in your home you can plug them into the garden almost anywhere because they take up minimal space and the are nutritious and delicious.
